My cuisine

For me, cuisine is a language — a secret code where ingredients speak the language of the land, the soul, and the seasons. In every dish, I strive to unite roots and momentum: the memory of Sicilian tradition, yet free from boundaries, ready to engage with modernity and contemporary techniques.

From the sea, the land, and the heart

I carefully select local ingredients: fresh Mediterranean catch, wild herbs, vegetables from the Sicilian countryside, and citrus fruits that fill the air with fragrance and light. Every element has its own character, its own identity — my task is to bring them together, finding accords, harmonies, and contrasts that tell stories.

Through light cooking methods, delicate textures, and balanced flavors, I strive to reveal the true essence of the ingredients — not to overpower them, but to enhance them. In the dining room and in the kitchen, there is a constant dialogue: presentation is not a mere embellishment, but a bridge between sight and taste.

A journey of the senses

In the sequence from appetizer to dessert, each course has its own role — its own mission:

  • The appetizer is the first invitation: it captures attention, awakens curiosity, and introduces the journey.

  • The first course is a melodic voice: featuring fine grains, homemade pasta, and accents from the sea or the land.

  • The main course is story and substance: meat, fish, or vegetables take center stage, balanced by their accompaniment.

  • The pre-dessert / sorbet cleanses the palate, preparing the mind.

  • The dessert is the emotional finale: measured sweetness, contrasts, memories, joy.

The whole is not a random sequence, but a harmonious sensory narrative that builds tension and relief all the way to the grand finale.

Tradition, light, sea

the taste of the Mediterranean.

The Brigade and the Kitchen

Behind every dish, there is a team — a symphony of hands, glances, and gestures that intertwine each day among the flames, aromas, and rhythm of service.

Natale Giunta’s brigade is a close-knit group of professionals, chefs, pastry chefs, and commis united by a single philosophy: respect for ingredients and the pursuit of perfection in every detail.

Each member of the kitchen is a guardian of part of the story — an interpreter of a tradition that is renewed through technique and creativity.

In the kitchen reigns the harmony of collective work: precision, passion, and attentiveness. It is a living space, where time flows to a different rhythm — marked by the sound of knives, the rising steam, and the mingling aromas.

Here, experimentation meets discipline, and every dish is the result of shared thought — a gesture that becomes memory.

Natale Giunta’s kitchen is a workshop of emotions and knowledge, where young talents are trained and the wisdom of a generous land is preserved.

A place where Sicily meets the world — where tradition becomes innovation, and the team becomes family.
